Whether you’re serving it as a cozy lunch or a light dinner, this tomato soup is sure to warm your heart and fill your belly. There are alterations to this recipe to make it dairy free! Let’s dive into this easy and delightful recipe!
Ingredients
-2 tablespoons olive oil
-1 medium onion, diced
-2 cloves garlic, minced
-2 pounds, or approximately 28 ounces, of fresh tomatoes, chopped
-2 cups vegetable broth (or chicken broth)
-1 teaspoon sugar (optional, to balance acidity)
-1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)
-Salt and pepper to taste
-1/2 cup heavy cream or coconut cream (optional, for creaminess)
-Fresh basil for garnish (optional)
Instructions
1. Sauté Aromatics:
-In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
2. Add Tomatoes and Broth:
-Stir in the tomatoes and vegetable broth. Add the sugar, dried basil, salt, and pepper.
3. Simmer:
-Bring the mixture to a gentle simmer. Cover and let it cook for about 20-25 minutes to allow the flavors to meld.
4. Blend:
-Use an immersion blender to puree the soup until smooth (or transfer to a regular blender in batches). If you prefer a chunkier texture, blend it less.
5. Add Cream (Optional):
– If you want a creamy soup, stir in the heavy cream or coconut cream to keep it dairy-free and heat through. Adjust the seasoning with more salt and pepper if needed.
6. Serve:
-Ladle the soup into bowls and garnish with fresh basil if desired. Serve hot with crusty bread or grilled cheese sandwiches for a classic pairing!
Enjoy!
